Balsamic Glazed Vegetables with Pasta

This dish is perfect for a summer lunch or dinner.

Serves 4

Ingredients

  • 1 box of short pasta

  • 2 teaspoon of olive oil

  • 1 large onion, chopped

  • 8 ounces fresh button mushrooms

  • 2 cloves fresh garlic, minced

  • 1/2 cup balsamic vinegar

  • 1/2 teaspoon dried thyme

  • 3 medium sized Frozen Assets tomatoes, thawed

  • 1/4 cup parmesan cheese

  • Salt and pepper to taste

  • Optional: 1/2 cup fresh parsley leaves

Directions

1. Cook pasta according to package. While pasta is cooking, heat olive oil in skillet of medium high heat. 

2. Add chopped onions to skillet and cook for two minutes.

3. Add mushrooms and garlic and cook for 4 minutes.

4. Reduce heat to low, add vinegar and thyme, simmer for 4-5 minutes.

5. Remove the cores and coarsely chop tomatoes and add to a bowl with parsley.

6. Add skillet mixture, drained pasta, and parmesan cheese to bowl and combine.
