One-Pot Pasta Limone

One-pot pasta dishes are perfect for busy weeknights. You throw everything in the pot with your pasta and water, cook until the water is almost gone, and dinner is served. This lemony springtime recipe features leeks to make use of seasonal produce.

Serves 4

Ingredients

  • 12 OZ spaghetti or pasta of your choice

  • 2 small leeks or 1 big one, thinly sliced

  • 3 garlic cloves, diced

  • zest and juice of 1 lemon, plus more zest for serving

  • 3 sprigs basil, sliced, plus more for serving

  • 1 TSP salt, plus more to taste

  • 3/4 TSP black pepper, plus more for serving

  • 1 cup grated parmesan cheese

Directions

1. Combine the pasta, 4 1/2 cups of water, leeks, garlic, lemon zest, salt, pepper, and basil in a pot.

2. Bring the water to a boil and cook, stirring occasionally, until the pasta is cooked and there is very little water left, about 8-10 minutes. Be careful not to let it dry out completely. This is the point where your house starts to smell like spring :)

3. Stir in the lemon juice and parmesan. Add salt and pepper to taste, and garnish with lemon zest and basil.

4. Enjoy!
